What changed

The documentation removes stale version matrices and unsupported deployment claims. It now reflects supported chart values, dependencies, Midaz components, installation guidance, infrastructure and OpenTelemetry deployment, and the ALB health-check example. This is a documentation correction of the current runtime behavior; it does not announce a runtime release.
